Byebrook Farm family owns and operates a 45-cow dairy of Holsteins that has been in the family for eight generations. Growing practices: all natural, grass-fed, hormone-free, intensive grazing. Byebrook makes a raw milk gouda cheese, aged at least 60 days. Varieties available: plain, cumin seed, and cider-washed rind. It is available at the Byebrook farmstand, local stores, and Delhi and Andes farmers’ markets. At their roadside stand, they sell fresh bottled raw milk, brown eggs, and raw milk Gouda cheeses. You will also likely find Bread Fellows breads, Cowbella yogurt, Wharton Hollow honey, and baked goods from the Farmer’s Wife.
